Quinoa salad

I made up this salad. I didn't search recipe. It was great:) I served with fish and carrot puree.
Ingredients
1 tablespoon olive oil
1 onion, chopped
1 cup quinoa   
2 cup hot water
Salt to taste   
Ground black pepper to taste
1 cup chopped fresh parsley
1 cup chopped fresh mint
1 cup chopped fresh dill
1 lemon juice
2 small tomatoes chopped    


Directions:
 Pour oil into a medium saucepan, and place over medium heat. Add onion cook and stir for 10 minutes.
 Using a strainer, rinse quinoa under cold water. Drain well. Stir into the pan cook and stir for 1 minute. Add water bring to boil. Cover, and reduce heat to medium low. Simmer for 15 to 20 minutes, or until liquid is absorbed and quinoa is tender.

 Add parsley, mint, dill and tomatoes and lemon juice. Mix well. Serve
