This recipe is book called Turkish Table by Gonul Candas. Recipe doesn't have cucumber but I added cucumber. I used 1cup of bulgur instaed of 2 cups of bulgur. Recipe doesn't have jalapeno pepper but I used it because we love spicy food.
Ingredients
1 cup of fine bulgur
1/4 cup of olive oil
1 small onion
2 scallions
1 big tomatoes
1 small cucumber
1 jalapeno pepper ( optional )
1 teaspoon red pepper paste
1 teaspoon tomatoes paste
1 lemon
1//2 cup parsley
1 teaspoon salt
Preparation Method
1- Put bulgur into a pot with 1 cups of hot water and cover.
2-Wash and dice tomatoes, pepper, scallions, parsley, cucumber
3- Once bulgur swells all the water put pepper paste, tomatoes paste and salt mix together.
4- Add the diced vegetables, oil and lemon juice and mix.
5-remove onto a service plate and garnish with lettuce leaves.
