Flounder Meuniere

This recipe from cook book called  1000 low fat recipes from Parragon Publishing.  Recipe used butter and sunflower oil. I used olive oil. It was very easy to make. I love the taste. 

Ingredients

1/2 cup milk
3/4 cup all purpose flour salt and pepper
4 piece flounder ( recipe used sole )
2 tbsp olive oil (  recipe used butter and sunflower oil)
2 tbsp chopped fresh parsley
lemon wedges

Preparation Method
1- Pour milk into a shallow dish. Place flour an a  large,flat plate and season to taste with salt and pepper.
2-Dip the flounder in the milk and then in the flour, turning to coat. Shake off any excess.
3-Put the olive oil in a large heavy bottom skillet. Add the fish fillets and cook over medium heat for 2 - 3 minutes. on each side or until lightly browned. Sprinkle with the chopped parsley and serve immediately,garnished with the lemon wages.
