This recipe is from cookbook called best ever Chicken editer Linda Fraser.
Ingredients
1 lb chicken breast
1 tbsp oil
2 scallions
1 clove garlic, crushed
3 tbsp honey
1/4 cup orange juice
1 orange, peeled & segmented
2 tbsp soy sauce
fresh parsley chopped
Preparation Method
Preheat oven to 375 degrees. Put chicken in shallow roasting pan. Fry scallions & garlic in oil 2 min. Add honey, juice, orange segments & soy sauce. Stir well until honey has dissolved. Pour sauce mixture over chicken. Bake uncovered 45 min, basting with glaze once or twice until chicken is cooked through. Cut slices and garnish with parsley.
