Tilapia with ginger & lime

 This recipe is cookbook called Fish & Shellfish by Hilaire Walden. This marinate made the tilapia very moist and juicy. It was delicious. Recipe used 1 cup olive oil. It was way too much oil. I reduced it. 

Ingredients

2 shallots, finely chopped
1 inch piece ginger root,
juice of 2 lime
1/4 cup rice wine vinegar
1/4 cup vegetable oil
2 tbsp sesame oil
2 tbsp soy sauce
salt and pepper
4 tilapia fillets
leaves  from 1 bunch cilantro
 Stir fried vegetables to serve

Preparation method

In a bowl , mix together first 8 ingredients. Pour marinade over fish and then marinade at least 2 hours.
Preheat broil or griddle cook 2 to 3 minutes each side.
