This recipe is from cookbook called 30 minutes or less Sweet treats. This book has a lot light of dessert recipes.
Ingredients
2lb 4oz/1 kg sweet potato
3 3/4 cups milk
1 cup sugar ( I didn't put any sugar)
chopped almonds , to decorate
Preparation method
Using a sharp knife, peel the sweet potatoes. Rinse them and then cut them into slices. Place in a large pan. Cover with 2 1/2 cups of milk and cook over low heat until the sweet potato is soft enough to be mashed.
Remove sweet potatoes from the heat and mash thoroughly until completely smooth. Add the sugar and the remaining milk and stir gently until completely blended together.
Return the pan to the heat and simmer the mixture until it starts to thicken.
Transfer to a serving dish. decorate with almonds, and serve immediately.
I'll bet it was great without the extra sugar.
ReplyDeleteYes, it was great fro our taste but maybe 2 tablespoon sugar would made like a more dessert.
