Jeremy here again. Wow... two days in a row Handan's let me cook! Well, actually it's because we're having people over tomorrow for the Super Bowl and we're both preparing lots of things. I'll post my Super Bowl chili recipe later (maybe tomorrow to make it three-in-a-row! ;)
I found a good low-fat pumpkin bread recipe online, but since I didn't have all the ingredients I decided to alter it slightly. I added a stick of butter so it's not quite so low-fat any more. I didn't have the apple sauce the recipe called for so I added some apple cider instead. Anyway, here it is...
Ingredients
Dry
1 cup whole wheat flour (I used King Arthur's Unbleached White Whole Wheat Flour)
2 cups oats
1/2 cup brown sugar
1 Tbsp cinnemon
1/2 tsp nutmeg
1 1/2 cups walnut pieces
1 tsp baking powder
1 cup cranberry raisins (Craisins by Ocean Spray)
Wet
1 stick butter
1 tsp vanilla extract
1 can pumpkin
1/2 cup apple cider
1 egg
Instructions
Preheat oven to 350 F
In one bowl combine the dry ingredients and mix well
In another bowl combine the wet ingredients and mix well
Add the dry ingredients to the wet and mix well
Pour the mixture into a non-stick loaf pan (or spray a pan with spray oil)
Sprinkle some oats on the top before placing in the oven.
Bake for one hour and check if done by sticking with a fork. If the fork comes out clean it's done.
Let cool, then slice and serve.
I never change the recipe if I bake. I always afraid that it is not going to come up good. Jeremy was very brave changing this recipe. I looked at the recipe he made a lot of changes. I'm impress that it was very delicious.
