Garlic Mashed Potatoes

Today was President's Day, a federal holiday which I was forced to observe (meaning SAIC forced me to take the day off and burn one of my personal days).  Ah well, at least it gave me a chance to cook for my hard-working and lovely wife Handan.  I found a very nice salmon recipe and decided to serve it with garlic mashed potatoes.  This mashed potato recipe is simple and always a favorite.  Here it is...

Ingredients
4-6 Yukon Gold medium sized potatoes
a little butter (I only used about 2 tablespoons, but you can use more if you like)
4-5 cloves of garlic
1 Tbsp olive oil
1/2 cup of milk (more or less)
salt to taste.

Directions
Cut the potatoes into quarters and place in a pot of boiling water.  Boil until a fork can easily break them up.
Meanwhile, heat a toaster oven (or oven if you must) to 350F.  Place the garlic in some aluminum foil and drizzle olive oil over them.  Wrap up and place in the toaster oven for approx 20 minutes (or until garlic starts to turn brown).
Drain the potatoes and put into a large bowl.  Add the garlic, butter, salt and milk and mash until creamy and smooth (I use a potato masher, but it can be done with a large fork).

Serve with main dish.
