beef & potato goulash

This recipe is from cookbook called What's cooking One Pot. I used a lot of recipes from this book. Recipe used cornstarch but I didn't use it and I used 1 cup chicken stock instead of 2 1/2 cup beef stock. Recipe used plain yogurt for garnish but I didn't use it.

Ingredients
2 tbsp vegetable oil
1 large onion
2 garlic cloves
1 lb /750g lean stewing steak
2 tbsp paprika
14 oz / 400g canned chopped
 tomatoes
2 tbsp tomato paste
1 large re bell pepper, seeded and chopped
6 oz / 175g mushrooms sliced
1 1 cup chicken stock
1 lb / 500g potatoes,cut into large chunks
Salt and pepper

Preparation Method
Heat oil in a large pan. Add onion and garlic and cook over medium heat ,stirring occasionally, for 3-4 minutes until softened.
Cut the steak into chunks,add to the pan, and cook over high heat for 3 minutes, or until browned all over.
Reduce heat to medium and stir in the paprika. Ad the tomatoes, tomato paste, red bell pepper and mushrooms. Cook the mixture, stirring constantly for 2 minutes.
Pour in the stock. Bring to a boil,stirring occasionally,then reduce the heat to low. Cover  and simmer gently for 1 1/2 hours,or until meat cooked through and tender.
Add the potatoes,cover and cook for an additional 20-30 minutes,or potatoes are tender.
Season to taste with salt and pepper. Top with the chopped fresh parsley.
