Apple ' N ' Spice Muffins

I decided to bake today so I was looking for recipes from cookbook "The Complete Cooking Light Cookbook". I love this cookbook because everything I cook from this cookbook turn out to be very good.
We eat with vanilla ice cream. It is so delicious.

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup cornmeal
  • 1/3 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1 3/4 cups shredded Golden Delicious apple
  • 3/4 cup low-fat buttermilk
  • 2 tablespoons vegetable oil
  • 1 large egg, lightly beaten
  • Cooking spray
  • 2 teaspoons sugar
  • 1/4 teaspoon ground cinnamon

How to Make It

Step 1
Preheat oven to 400°.
Step 2
Combine first 8 ingredients in a large bowl; make a well in center of mixture. Combine apple, buttermilk, oil, and egg in a bowl; stir well. Add to dry ingredients, stirring just until moist.
Step 3
Divide batter evenly among 12 muffin cups coated with cooking spray. Combine remaining ingredients; sprinkle over muffins. Bake at 400° for 20 minutes or until golden. Remove from pans immediately. Serve warm.

Easy Banana Oat Bar

Today is Fourth of July! We are enjoying relaxing day at home. I had a bananas and they were ripe, I checked recipes from Pinterest and found this recipe. It is so delicious! Ingredients

  • 3 small ripe bananas                               
  • 1 cup rolled oats
  • 1/2 cup peanut butter
  • 2-4 Tbsp maple syrup
  • 1 egg
  • 1/2 tsp baking soda
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/4 cup chocolate chips

Instructions

  1. Mash bananas in a bowl.
  2. Add oats, peanut butter, maple syrup and egg and mix well.
  3. Add remaining ingredients and stir until combined.
  4. Pour into a 9x9 (or 8x8) baking sheet lined with parchment paper.
  5. Bake at 375 for 20 minutes.
  6. Let cool, cut and serve.

Banana Oat Muffins

 I love this muffins! There is no flour and sugar in it. My new favorite recipes from Tasty videos.
 I used dried cranberry and walnut instead of fresh fruits. 

INGREDIENTS
1 banana, mashed
1 egg
½ teaspoon vanilla¼ cup honey
1 teaspoon cinnamon
¼ teaspoon salt
½ cup Greek yogurt
1 cup milk
1½ cup oats

Optional Toppings
Strawberries
Blueberries
Apples
Blackberries
Raspberries
Nuts
PREPARATION
Preheat oven to 350ºF/180ºC
In a medium-sized bowl, mash a ripened banana until mostly smooth.
Add egg and stir
Add vanilla, honey, cinnamon, salt, and Greek yogurt, and mix. Then stir in oats, then finally, stir in milk.
Fill each cup of a six-cup muffin tin a quarter of the way full. In each respective cup, add strawberries, apple, blueberries, blackberries, raspberries, and almonds, then fill cups to the top with the rest of batter.
Bake 30 minutes.
Allow to cool for 5 minutes.
