Chocolate Fruit Bread

It has been long a time since I have post recipes. It doesn't mean I'm not cooking but I'm busy with my work. I cannot find time to post recipes. I recently made a chocolate fruit bread. I meant to post it so I took a picture of it. I'm finally posting it. I found this recipe cookbook called practical cookery Chocolate.  It is so delicious.



Ingredients
3/4 cup butter, softened
2/3 cup light brown sugar
4 eggs, lightly beaten
8 oz/225 g dark chocolate chips
1/2 cup raisins or cranberies
1/2 cup chopped walnuts
finely grated zest of  1 orange
2 cups self - rising flour

Preparation
 Lightly grease a 2 lb/900 g loaf pan and line the bottom with baking parchment.
Cream together the butter and sugar in a bowl until light and fluffy.
Gradually add the eggs, beating well after each addition. If the mixture begins curdle, beat in 1-2 tablespoon of the floor.
Stir in the chocolate chips, raisins, walnuts, and orange zest. Strain the flour and carefully fold it into the mixture.
Spoon the mixture into the prepared loaf pan and then make a slight dip in the center of the top with back of a spoon.
Bake, in a preheated oven, 325F/170 C for 1 hour or until a fine skewer into the center of the loaf comes out clean.
Let the loaf cool in the pan 5 minutes before carefully turning out on to a wire rack to cool completely.
To serve the fruit bread, cut it into thin slices.
