This recipe is from cookbook called 1000 vegetarian. We love coconut milk and it goes very well with rice. I will serve with mango.
Ingredients
1/2 cup short or round-grain pudding rice
2 1/2 cups coconut milk
1 1/4 cups milk
1 lime rind grated
1/3 cup superfine sugar
knob of butter ( I didn't use it)
fresh fruit to serve
Preparation Method
Lightly grease a 2 1/2 pint/1.5 litre shallow ovenproof dish.
Mix the pudding rice with the coconut milk, lime rind, and superfine sugar until all the ingredients are well blended.
Pour rice mixture into the greased dish and dot the surface with a little butter ( if you are using). Bake in the oven for about 1 hour until almost all the milk has been absorbed and a golden brown skin has baked on the top of the pudding.
Serve with fresh fruits.

ReplyDeleteThis sounds delicious! Reminds me of a traditional Thai dessert - sweet coconut sticky rice (which is often served with mango, too).
