Chicken vegetables casserole

I used cookbook called One pot for the inspiration. I found one recipe and changed it. It was vegetable dish but I used chicken. I used different vegetables. I like the spices in this recipe and also, lemon. Rest of them is my imagination.

Ingredients
4 tablespoon olive oil
2 chicken breast chopped
2 big onion
6 garlic cloves chopped
2 tsp ground cumin
2 tsp ground coriander
pinch of cayenne pepper
2 carrot sliced
2  eggplant
1 zucchini sliced
1 cup green beans
1 big potatoes sliced
1 big tomatoes
grated rind and juice of 2 large lemon
salt and pepper
2 tbsp chopped fresh cilantro

Preparation Method
Mix all the vegetable in a big bowl and add salt. pepper and 2 tbsp oil. Set aside
Heat the 2 tbsp oil in a flameproof casserole. Add the onion and garlic and saute over medium heat, stirring frequently, for 3 minutes.
Add chicken  and cook for 5 minutes. Stir the cumin, coriander, and cayenne pepper and cook stirring constantly for 1 minutes. Add mixed vegetables in the casserole.
Add lemon rind and juice. I didn't add any water. Please check if needs water add maybe half cup water. Season to taste with salt and pepper. Cover and cook over medium heat stirring occasionally, for 30 minutes, or until tender.
Remove the lid, sprinkle in the chopped fresh cilantro, and stir well.
