This recipe is from cook book called
Perfect Chinese. I changed all the vegetables because I wanted to use whatever vegetables I have in the refrigerator. Recipe used chicken but I didn't use chicken.
Ingredients
- 2 tablespoon vegetable oil
- 1 onion
- chili paste ( optional )
- 1 cup peas
- 2 tablespoons soy sauce
- 2 large carrots, diced
- 1 zucchini, chopped
- 1 large red bell pepper, diced
- 1 large tomatoes, diced
- 2 cups cooked white rice
- salt and pepper
Directions
- Heat oil in a large skillet over medium heat. Add the onion and saute until soft. add chili paste.
- Stir in carrots, zucchini, red bell pepper, peas and tomatoes stir-fry another 5 minutes. Then add rice and stir thoroughly.
