Stir fried rice with vegetables

This recipe is from cook book called Perfect Chinese. I changed all the vegetables because I wanted to use whatever vegetables I have in the refrigerator. Recipe used chicken but I didn't use chicken.

Ingredients

  •   2 tablespoon vegetable oil
  • 1 onion
  • chili paste ( optional ) 
  • 1 cup peas
  • 2 tablespoons soy sauce
  • 2 large carrots, diced
  • 1 zucchini, chopped
  • 1 large red bell pepper, diced
  • 1 large tomatoes, diced
  •   2 cups cooked white rice
  • salt and pepper

Directions

  1. Heat oil in a large skillet over medium heat. Add the onion and saute until soft. add chili paste.
  2. Stir in carrots, zucchini, red bell pepper, peas and tomatoes stir-fry another 5 minutes. Then add rice and stir thoroughly.
