This recipe is from cookbook called Perfect Mexican. Recipe used shrimp but I used chicken. It worked very well.
Ingredients
2 pieces chicken breast
1/2 tsp ground cumin
1/2 tsp mild chili powder
1/2 tsp paprika
2 tbsp orange juice
2 tsp lemon juice
2 tbsp olive oil
2 tbsp chopped fresh cilantro
salt and pepper
Preparation Method
Combine the chicken with the cumin, chili powder, paprika, orange juice, lemon juice, and olive oil and cilantro. season to taste with salt and pepper. Marinate in the refrigerator for at least 3 hours.
And than place the chicken over the hot coals of the grill and cook for a 5 minutes each side.
Serve with guacamole.
