Potato Wedges

Hello.  Jeremy blogging again (for a change).  Handan made fish tonight and I decided to make potato wedges.  Fish and chips... a natural combination.  This is a very simple recipe that tastes great.

Ingredients:

2 or 3 pototoes (I used baking potatoes tonight, but you can use just about any variety)
3 Tbls vegetable oil
Salt, pepper, cumin, paprika, cayenne pepper (to taste)

Directions:

Pre-heat oven to 400 F 
Cut the potatoes into wedges - cut each potato in half first, then slice into thin wedges and then half each piece.
Toss the potato wedges with the oil and seasonings to evenly coat.  I toss in a large bowl, but you can do this in a plastic bag as well.
Spread the potato wedges on a non-stick pan.  Bake until the outside is crisp (approx. 20 minutes)

  1. I just discovered Reynolds non-stick aluminum foil and have been using it. It is especially good for when I do a meat or peppers with the potatoes as they tend to stick a lot more, even on my non-stick pan.
