Cheese Muffins

This recipe is cookbook called The great big baking book.  I tried this recipe couple of times and I love it.
Ingredients
2 oz butter
7 oz plain flour
2 teaspoon baking powder
1 tablespoon sugar
1/4 teaspoon salt
1 teaspoon paprika
4 fl oz milk
1 teaspoon dried thyme
2 oz cheddar cheese, cut into 1/2 in ( 2 cm) dice
Preparation Method
Preheat oven to 375F. Thickly grease 9 deep muffin tins or use paper cases.
Melt butter and set aside.
In a mixing bowl, sift together the flour, baking powder, sugar salt and paprika.
In a another bowl, combine the eggs, milk melted butter and thyme and whisk to blend.
Add the milk mixture too dry ingredients and stir just until moistened: do not mix until smooth.
Place a heaped spoonful of batter into the prepared cups. Drop a few pieces of cheese over each, then top with another spoonful of batter. For even baking, half fill any empty muffin cups with water.
Bake until puffed and golden, about 25 minutes. Let stand 5 minutes on to a rack. Serve warm room temperature.

  2. Hi Kathy, Jeremy and I didn't eat any of them. It has too much cheese in it. I took at work and gave my friends who helped me fix my flat tire yesterday.
