Snow pea and lettuce salad with crunchy croutons

 I found this recipe from Super Salads cookbook. I didn't have bean sprouts or trimmed alfaalfa  for the garnish I didn't use it. I used olive oil instead of vegetable oil. I didn't cook bread with butter and garlic to make croutons because I think that it was going to be heavy. I like the way I prepared.  It is very easy recipe.

Ingredients

500 g snow peas
crisp hearts of 2 green lettuces
3 spring onions, finely sliced
2 tablespoons olive oil
1/2 lemon juice
salt and freshly ground black pepper
2 small cucumber
2 thick slices wholemeal bread


Preparation method



Blanch snow peas in lightly salted boiling water for 1 minute. Immerse in iced water; drain.
 

Tear lettuce into pieces. Distribute among serving bowls. Add snow peas; sprinkle with spring onions.
 


To make the vinaigrette, whisk oil, lemon juice and a generous seasoning of salt and pepper. Drizzle over salad greens.
 


To make the croutons: cut the bread into small cubes. put on a tray toast  until crisp.
Serve the salad topped with hot croutons.
