Salmon with Honey-Mustard Almond Crust

Note: Jeremy cooking/blogging today.  I found this recipe on the internet but modified it to suit my tastes.  It originally called for olive oil in the dressing as well as soy sauce.  I thought the oil was unnecessary and the soy sauce added too much salt.  



2 salmon fillets
1/4 cup almonds, toasted and chopped
2 T Dijon mustard
2 T honey
2-3 cloves garlic, chopped
salt and pepper

1. set oven to broil and lower the rack (else almonds will burn)
2. mix the honey, mustard and garlic in a small bowl
3. season the salmon with salt and pepper
4. drizzle the honey-mustard over the fillets to coat evenly
5. cover the fillets with the toasted, chopped almonds
6. cook the salmon for 6 minutes (more or less, depending on thickness of the fillets)
7. serve with lemon
