Oatmeal Walnut Cookies

I found this recipe from Costco give away cook book called Smart cooking the Costco way.I made this cookies second time and this cookies are my favorite. I didn't use granulated sugar.

Ingredients

  • 1 cup  packed dark brown sugar
  • 1/3 cup granulated sugar ( optional)
  • 2  cup  butter, softened
  • 1  teaspoon  vanilla extract
  • 2  large egg
  • 1 1/2  cups  all-purpose flour
  • 3  cup  regular oats
  • 1 tsp baking soda
  • 1/4 tsp ground nutmeg
  • 2 tsp cinnamon
  • 1/4  teaspoon  salt
  • 1  cup  sweetened dried cranberry
  • 3  cup  chopped toasted walnut

Preparation

Preheat oven to 350º.
Place first 5 ingredients in a large bowl. Beat with a mixer at medium speed until well blended. Lightly spoon flour into a dry measuring cup; level with a knife. Add flour, oats, baking soda, nutmeg, cinnamon and salt to egg mixture; beat well. Stir in dried cranberry and walnuts.
Drop by level tablespoons, 1 1/2 inches apart, onto a baking sheet coated with cooking spray. Bake at 350º for 12 minutes or until lightly browned. Remove from oven; let stand 2 minutes. Remove cookies from baking sheet; serve warm.

  1. I love the way the house smells when she's baking these cookies. I get fatter just walking into the kitchen! And the cookies are the best!!! Not too sweet like chocolate chip cookies. Just right.

    I just relized that recipe used 1/3 cup granulated sugar but I didn't use it. I just used 1 cup brown sugar. That's why not too sweet.
