Cinnamon Balls

This recipe is from my favorite baking book called The great Big Cookie Book by Hilaire Walden. It is very easy to make.

Ingredients

1 1/2 cups ground almonds
1/3 cup brown sugar
1 tbsp cinnamon
2 egg whites
oil for greasing
confectioner sugar for coating

Preparation method
Preheat oven 350F. Oil a baking sheet.
Mix together the ground almonds, sugar and cinnamon. Whisk the egg whites until they begin to stiffen and fold enough  into the almonds to make a fairly firm mixture.
Wet your hands with cold water and roll spoonfuls of the mixture into balls. Place these on the prepared baking sheet.
Bake about 15 minutes. Sift a few tablespoon of confectioner sugar top of the balls.
Store in an airtight container or in the freezer.
